Andouille is a smoked pork sausage, usually spicy and garlicky originating from France, but it is very much part of New Orleans Creole cooking - used in red beans and rice, soup, mac'n'cheese, stews or even diced in gumbo. Now we have a touch of Louisiana style sausages (American Chorizo) available in store in Leichhardt Sydney!
