Japanese Yakitori BBQ Charcoal Grill – Diatomaceous Earth Hibachi Konro
This compact and simple charcoal grill is crafted from diatomaceous earth, the same natural material traditionally used for shichirin. Known for its excellent heat retention, diatomaceous earth allows you to take full advantage of charcoal cooking.
Modern production of shichirin (or Konro, as it is called in some regions) has evolved to focus on ease of use, improved design, and appearance. Today’s rectangular Konro grills come in a variety of colors and feature a steel sheet wrapped around the outside for easier cleaning. This grill is ideal for cooking with charcoal—whether you use traditional Binchotan (available separately) or other types—to grill meat, seafood, vegetables, and more.
Grilling over charcoal adds a smoky flavor that cannot be achieved with other cooking methods. The infrared temperatures from Binchotan help cook evenly, seal in juices, and preserve the natural umami, resulting in a golden exterior and a tender, juicy interior. Use the airflow vent slides in its front of the base to control and adjust the heat level.
Please note that burning charcoal produces carbon monoxide, so this grill should only be used in well-ventilated areas. Additionally, place a wooden or heat-resistant mat under the grill as the bottom can reach high temperatures.
