Gidgee timber is a very, very hard-wood timber (not uncommon to get sparks off the chainsaw when your cutting it). It creates a charcoal that burns very, very hot and burns for a long period of time. This charcoal is created by starving burning Gidgee wood from Oxygen leaving 59% carbon at the end of the process making this a very natural product.
This Gidgee timber is harvested from fallen dead trees which are plentiful in the south western part in Queenland all the way through the dry woodlands into Northern Territory.

Can also be used in the garden as a soil improver or fertilizer if ground up into dust. The burnt ash from this is also known as potash and used to balance nutrients in the garden as well (or to keep snails away as a natural pest control).
Pieces sizes vary - smaller sized pieces for more even heat when grilling. Best way to light is to use Firelighters or chimney starter.
Note Gidgee Charcoal is hotter than Compressed Breads / Logs as well as imported charcoal so best to start off with less charcoal at first when using - in this way you can get use to the initial intense heat and not burn your food early during the cook which is common for first time users of this product.
