Performance and cooking behaviour

Hickory produces a heavier smoke than fruit woods. It develops a pronounced bark and deeper smoke ring when used in low temperature, extended cooks.

On charcoal, add directly to hot coals in measured amounts. On gas, use a smoker box or foil pouch to control smoke intensity and avoid overpowering the meat.
