Brahman cattle have a distinctive hump at the back of their neck and has a really beefy taste. The hump meat is heavily marbled with fat so can handle slightly higher 275F/135C cooking temps in the smoker, taking up to 10 hours cooking just like a brisket.
Brazilians call this cut Cupim and known as a noble cut similar to cuts from the loin or tenderloin. Usually marinated 24 hours prior and slow cooked in a braise. Or try it seasoned with rock salt and grilled low and slow for 5-6 hours, leaving a comfortable sensation in the mouth.
We also call this ourselves the poor mans brisket as it comes up beautfully when its smoked low and slow on smaller BBQs.
